At GILDA, every product starts with a simple question: what do we actually serve at Restaurant Roberto? The Adagio Tomato & Oregano Sauce GILDA is the direct answer to that question. Crafted from our kitchen's original recipe, it was entrusted to an Italian artisan who shares our standards: short supply chain ingredients, no intermediaries, a straightforward and concentrated result.
The name Adagio is no coincidence. In music, adagio means "slowly, with care." That is exactly how this sauce is made: no rushing, no shortcuts, with attention given to every ingredient. A slow cook brings out and concentrates the flavours, giving this sauce a particularly well-rounded depth.
Km 0: when the short supply chain becomes a philosophy
What "Km 0" really means
The Km 0 label designates products grown, processed and consumed within a limited geographic radius. No transcontinental transit, no weeks in cold storage. The tomatoes that make up 86% of the Adagio sauce are grown and processed in Italy, close to the artisan who works them, as are the carrots, onions and celery that form the famous "Soffrito." The chain is short by design, not by marketing. Only the oregano is an exception, imported from Sicily by our artisan for an authentic flavour of Southern Italy.
In Switzerland, food traceability matters. Consumers pay close attention to the origin of products, how they are made, and whether what is promised matches what is on the plate. The Adagio sauce answers that demand directly.

One artisan, one recipe, one territory
The artisan who makes the Adagio sauce does not work at an industrial scale. Each jar is produced in small batches, with direct oversight of the entire supply chain. Tomatoes are selected at peak ripeness, oregano is imported from Sicily, and the extra virgin olive oil is chosen for its quality alone. The ingredient list is short by conviction: tomatoes (86%), onions, carrots, celery, sugar, sea salt, extra virgin olive oil, oregano (0.1%).
Three ways to use it
On pasta
Ready to use as-is, and equally ideal as a base for more complex sauces. Perfect with our Spaghetti di Gragnano IGP GILDA or Afeltra Penne Rigate.
On bruschetta
Spoon onto grilled bread slices, add a drizzle of Sole Mio extra virgin olive oil and a few fresh basil leaves. Simple and direct.
As a pizza base
Spread directly on the dough without pre-cooking. The tomato flavour concentrates in the oven. Finish with a drizzle of Sole Mio oil straight out of the oven.
