For our signature pasta, GILDA by Restaurant Roberto has chosen to collaborate with the renowned Afeltra pastificio, founded in 1848 in Gragnano. These Spaghetti n°1 are the result of ancestral expertise: using premium durum wheat semolina mixed with pure water from the local springs of the Lattari Mountains.

The Excellence of Bronze Drawing

The hallmark of GILDA spaghetti lies in its production: it is drawn through traditional bronze dies and undergoes a slow drying process at low temperatures. This artisanal method creates a porous, rough surface—an essential condition for your sauces to grip the pasta perfectly rather than sliding to the bottom of the plate.
