The Giant of Gragnano

The Pacchero is arguably the most iconic shape in the Campanian pasta tradition. Its name comes from the Neapolitan word "pacchia" (a slap), evoking the sound the pasta makes when tossed with sauce. True to its heritage, Afeltra offers a masterful version: a wide, cylindrical, and imposing pasta that demands the finest Italian durum wheat.

Exceptional Cooking Integrity

At GILDA by Restaurant Roberto, we have selected these Paccheri for their incredible "bite." Thanks to bronze-drawing and very slow drying at low temperatures, they maintain perfect elasticity even after cooking. Their porous surface captures every drop of sauce, while their large diameter makes them ideal for stuffing or pairing with robust pieces of meat or seafood.

Classic Pairings: Ideal with a sausage and broccoli rabe (cime di rapa) sauce or a hearty seafood ragù.

Gourmet Version: Try them stuffed with ricotta and spinach, then lightly baked in the oven for a refined gratin.

Pro Tip: Toss them gently with a wooden spoon to maintain the shape of the large pasta tubes.
