Riserva San Massimo Carnaroli rice is produced in the heart of a protected natural park in the Ticino Valley (Lombardy). What sets it apart? It is grown in a pure ecosystem, irrigated by mineral-rich natural springs. Unlike hybrid varieties, this "Carnaroli Autentico" has a unique molecular structure that allows it to release starch while maintaining a firm heart.

La Tostatura (Toasting): Dry-toast the grains in a hot pan for 2 minutes until they are hot to the touch.

Le Mouillage (Adding Liquid): Add your broth ladle by ladle.

La Mantecatura (Creaming): Off the heat, add cold butter and Parmigiano Reggiano to achieve the highly sought-after "all'onda" (wave-like) texture.
